The thinnest but the most expensive member of the cinnamon family is known as ALBA. Its diameter is 6 mm to 8 mm and rich in taste and aroma. Even in Ceylon, this superior grade is quite rare and is at the top of the price range.
This is the second grade of the Ceylon cinnamon quality. C – grade stands for Continental Grade. It is categorized into different grade by its diameter. Under C grade there are a few varieties listed such as C5 Extra Special, C5 Special, C5, C4 and C3.
This is the third category of Ceylon cinnamon and this is another most demanded cinnamon grade in the global market. This grade has a different taste, aroma and texture when we compare it to other grades. You can commonly find M-grade Ceylon cinnamon. It is full of the richness of the same quality and it is less expensive.
Less delicate Hamburg diameter size of the quilling is 21 mm to 23 mm. This H grade is an almost golden brown colour and has a distinct flavor and quality that is typical of Ceylon True cinnamon. When compared to other Ceylon cinnamon categories H grade cinnamon is not expensive.
25 kg and 45 kg weight, 42-inch cinnamon stick packs are called bales. It is covered with jute gunny on the outside and “Food Grade” polythene on the inside.
Cinnamon quilling is offcuts or extra pieces of cinnamon obtained while peeling and bailing the quills.
